Aloo Gobi Recipe by Manjula, Indian Vegetarian Food

INGREDIENTS:
(Potatoes Cauliflower) Recipe for 2-4
2 cups of cut cauliflower
2 medium red potatoes sliced
1/2″ shredded ginger
3 teaspoons coriander powder
1/4 teaspoon turmeric
1/4 teaspoon red chilly powder
3 tablespoons oil
Pinch of hing (asafetida)
1/2 teaspoon in seed
2 green paper sliced seeded long way
2 bay leafs
1 teaspoon salt (or to taste)
1 teaspoon amchoor (mango powder)
2 tablespoon chopped cilantro
1/4cup water

    o Manjula! I just made this and it turned out delicious! I used very tiny red potatoes and left the skins on as you said. It is quick and easy, and I love how the vegetables don’t overcook and the cauliflower stays a little crunchy.
    It really helps to watch you actually make your dishes!!
    (but my hands are still burning from cleaning out those green chiles!!) :-)

    one comment: mine took about 40 minutes cooking time, not 15! (maybe the fact i was doing double quantities made the difference)

    When i was in India i ate Aloo Gobi daily but i never go it ”dry” sort-a-speak it was always with a sauce like the one served with Chicken Tikka Masala, some sort of red/brownish tomatosauce or something does anybody know that recipe??
