		<description>I would try Ener-g Egg replacer, you can usually find it in a health food store. It&#039;s a powder that you mix with water and it works as a binding ingredient like eggs do. Maybe dip it in the egg replacer then dip in flour or bread crumbs; I don&#039;t know if it would be good with just the egg replacer alone. I wouldn&#039;t use tofu, I think it would be too heavy, but honestly I&#039;ve never tried, I usually just use the egg replacer.
