What are some easy vegan baking recipes?

My friend and i are trying to bake something but she is a vegan. We are looking for some vegan baking recipes that don’t need things like soy milk and egg replacers. Please Help!

I LOVED baklava, but traditionally, the layers of phyllo dough are brushed with butter, and the pastries are also soaked in honey *frowns* HOWEVER, there is way to make vegan-friendly baklava without the butter and honey! Yay! You and your friend will enjoy these sinful treats. They’re like candy and pastry wrapped into one.

    Here are two of my favorites!

    Black Bean Brownies
    Ingredients:
    15oz can black beans, drained and rinsed
    2 bananas
    1/3 cup agave nectar
    1/4 cup cocoa
    1 tbsp ground cinnamon
    1 tsp vanilla extract
    a few drops mint extract *optional
    1/4 cup raw sugar **optional
    1/4 cup quick/instant oats
    chocolate chips *optional
    chopped walnuts *optional

    ** if you’re bananas are really ripe (browning) you probably won’t need the extra sugar; I suggest making the batter without it, then taste testing it to see if you need to add more sugar.

    Directions:
    1. Preheat 350F
    2. Combine all ingredients, except oats, in a food processor or blender
    3. Blend until smooth, scrapping sides as needed
    4. Stir in the oats
    5. Pour into a greased 8×8 in pan
    6. Bake approx 30 minutes, toothpick test
    7. Allow to completely cool before slicing
    ** if you find these brownies are too soft or too fudgey, add another 1/4 cup oats or flour

    each: 85 calories, 1g fat, 16g carbs, 4g protein

    Banana Bread

    prep time: 15 minutes | cooking time: 1 hour | makes 12 slices

    A simple, no frills banana bread. Perfect for, um, eating. I recently edited the amount of sugar needed, so this should be perfect now.

    Equipment:
    8 x 4 bread pan

    Ingredients
    1/2 cup brown sugar
    1/2 cups white sugar
    1/2 cup margarine, at room temp
    3 very ripe bananas, mashed well
    2 cups flour
    1/2 teaspoon baking soda
    1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
    1 teaspoon vanilla
    1 teaspoon cinnamon
    1/4 teaspoon allspice
    1/2 teaspoon salt

    Directions
    Preheat oven to 350 F. Spray a 8×4 bread pan with non stick cooking spray, or lightly coat with margarine.

    Sift together flour, baking soda, salt and spices.

    Cream together the margarine and sugars. Add bananas, soy milk and vanilla.

    Add the wet ingredients to the dry. Mix well. Pour batter into pan. Bake for an hour to an hour 10 minutes.

    Not really baked things, but here are a couple of things I like for breakfast:

    Vegan French Toast
    - 6 slices of whole wheat floor
    - 1 cup non-dairy milk (soy, almond, rice, etc.)
    - 2 Tbsp silken tofu
    - 1 tsp sugar
    - 1 tsp vanilla extract
    - Cinnamon to taste

    Mix all ingrediants together except the bread. Dip slices of bread into mixture and let one side cook until slightly brown. Repeat until done.

    Vegan Strawberry Pancakes:
    - 2 cups unbleached flour
    - 3 tbsp sugar
    - 3 tbsp baking powder
    - 2 cups non-dairy milk (soy or similar)
    - 3 tbsp vegetable oil
    - 1 cups fresh sliced strawberries

    Mix all ingredients until you have a thick, smooth batter. Spoon batter onto a frying pan to form a medium sized pancake. Lightly brown, then flip to other side. Repeat until all batter is gone. Serve with maple syrup.

    Pumpkin cookies.

    Boxed cake mix that contains no eggs or dairy. Spiced or yellow is tasty.

    Can of pumpkin.

    Mix them together, spoon it onto a cookie sheet, and bake at 350 for 10 minutes or so until they’re done.

    You can make a tasty glaze out of confectioners sugar and apple juice and drizzle it over the top.

    Really good and simple as it gets.
