And what I mean by vegan is mostly meatless, primarily vegetables, eggs and cheese okay.
I’m trying to gather recipes for soups (or other things) that are relatively cheap to make (vegetables) and that I can make once and eat for a week.
So anything that applies is definitely helpful :]]]
So far all I have is french onion soup :/
not really wanting anything high in breads since that’s all I eat right now.
We had a pot luck at work today and there are several vegetarians here. I made a soup that is all veggies.
1 large can diced tomatoes with juice
4 cups vegetable broth
package baby spinach
1 cup carrots
1 onion
2 celery stalks
1 teas. basil
1/2 teas oregeno
1 garlic clove
1/4 teas. crushed red pepper flakes
2 bay leaves, whole
Cook for several hours in crockpot

Okay, just so you know, eggs and cheese are not vegan. Just in case you’re wanting to serve this soup to someone who is vegan.
