    Zdrastvuitye Lara, I find once beets are cooked you don’t even need to peel with potato peeler…it removes too much beet. You can push the skin right off with your fingers, without losing (wasting) too much of the beet flesh.

    Try with Sunflower oil Bruce…pay homage to Ukrainian’s National Flower!

    when i make a form of Borscht, and call it Purple Haze. I pre-peel the beets and cook them in some cheap but good Pinot Noir. Then i use purple cabbage, purple onion, purple carrot, and even a cherokee purple tomato. i also use some thai basil. i use the same spices
