I’ve been a lacto-ovo vegetarian for a few months now but all I seem to eat is cheese, protien bars, pasta, nuts , and salad. I do eat whole grain breads, eggs, and fruit but not much. I’m not too crazy about fake meat either. I would like to know what you healthy vegetarians eat for daily meals.

What I’m saying is I eat too much cheese , and pasta and can’t really figure out how to fit everything that I need into my meals. So I want to see what healthy vegetarians eat for their meals.

try to fit more fruits in. they’re sweet, so it will help change it up. and try adding some new vegetables to your regular meals. being vegetarian can be very healthy, or unhealthy if you don’t know what to eat.

Anyways, I’m a lacto-vegetarian and I ADORE cheese quesadillas. My family eats lasagna without meat, we replace that with spinach. TVP (Textured vegetable protein) is great for chili and spaghetti. TVP gives you the feel of meat without the guilt- or the terrible taste.
Edit: Well, you could always try more exotic dishes like stuffed peppers. Try looking through Indian cookbooks.

I eat lots of different vegetables, whole grains (brown rice, whole wheat bread and whole wheat pasta etc), beans and all the things I can make with these things like:
Veggie lo mein
Stir fry
Stuffed squash
spinach lasagna
Vegetarian Reuben sandwiches
Vegetable stews and soups

Here’s what I made for my family this past week:
Whole grain spaghetti
Tacos – beans replace meat
vegetarian chili
home made pizza – whole grain crust, light on the cheese
Veggie & tofu stir fry on whole grain rice
Sandwhiches – my 5 year old loves Tofuti (dairy free) cream cheese & cucumber
Oatmeal for beakfasts
Organic yogurt & fruit smoothies
lots of fruit & veggies & dip etc….

im the same scott, too much cheese, far too much, so i kinda went on a cheese umbargo, and eat much less now
i try to not eat more than one cheese item in a day, and not to much of it either
i admit i eat a LOT of pasta, right now tho im loving pesto onit instead of normal sauces, so im eating that all the time, soups,
im eating a lot of cup a soups,
im still on a bit of a diet, and they are a good source of water and food all in one
you can make spag boll, and lasagne out of those ‘fake meats’
its not about them being fake meats, its about them making and being good , varied and healthy dinners
you coudl try rice, egg fried rice with some spring onions, tomato puree, onions and whatever else you like in it
its healthy, low in fat and isnt pasta or cheese ;-D
