Please help me plan a two-course menu for a Lacto-ovo vegetarian and a Strict vegetarian.?

I think you mean Vegan – it's more accurate than "strict vegetarian".

What two courses? I'll go with starter and entree.

Start with a salad

Mixed herb or baby green
Slice some strawberries and toss them in
Add some pumpkin seeds (toasted & salted)

For the dressing, mix some balsamic vinegar & olive oil with some natural vanilla extract. Add some dried "Italian Herbs". Let sit overnight and use a small amount to dress the salad.

You may also want to offer some crumbled gorgonzola or bleu cheese to those who wish to top with it (post serving).

I don't know how formal you want the dinner to be, so I'll try and give you a middle of the road one.

Find a good recipe for Ratatouille Pasta. Here's one, and it looks Vegan. http://vegetariantimes.com/recipes/9079?section= Offer Parmesan and/or Mozarella for anyone who wants to sprinkle it on their plate.

If you mean Dinner & Dessert, buy a good Sorbet (read, read, read the ingredients.) Add a splash of Prosecco and fresh fruit to it.

    by strict vegetarin do you mean vegan? i've been a vegetarian for 8 years, and while i eat eggs i don't eat any meat or any food thats prepard with meat or meat broth. i would reccomend preparing something like hummus and serving it with pita bread and/or veggies. it's usually vegan and is really good for you. try asparagus stuffed mushrooms or black bean soup with white sticky rice. or a veggie stir-fry. all great ideas!! and easy to prepare or find in your local grocery store. try this site:www.lanierbb.com/recipes/vegetarian.html

    You could make an eggplant cassarole, with breadcrumbs, using a water wash, with tomato sauce and italian spices.

    Peel and slice an eggplant (thin). Dip slices in water then in bread crumbs. Saute in a fry pan with olive oil until lightly brown. Drain on paper towels.
    Layer eggplant in a greased casserole dish. Pour 1 jar of marinara sauce over. Season with oregano and parsley flakes. Bake for 40 minutes in a 350 degree oven.

    Serve with a salad, italian bread and olive oil as a dipping sauce for the bread.

    You could also make risotto with asparagus and onions.

    It's always nice to start off with a nice salad. I recommend fresh expresses Asian supreme. It comes with everything needed to make it and serves 3-4. A good bean soup is really nice. Here is a recipe for Moroccan Chickpea soup

    In a blender mix 1/4 cup chopped bell peppers, 1 tsp extra virgin olive oil, 1 tsp red wine vinegar, 1/4 tsp sugar, and a pinch of salt an pepper. Set aside.

    In a pan heat tbsp olive oil to medium heat. Add 2 chopped carrots, 3/4 chopped onion, 1/2 bell pepper, and 2 minced garlic cloves and cook till tender.

    Puree 3/4 tsp ground cumin, 1 can of chickpeas, 3 cups vegetable stock, and 2 tbsp lemon juice and combine with vegetables. Bring to boil and add in 2 tsp minced thyme, 1/2 tsp ground pepper, 1/4 tsp ground turmeric, and 1/8 tsp cayenne pepper. Swirl in the combo set aside.

    For an entree try yakisoba noodles from an oriental food store and mix with grilled zucchini and extra firm tofu.

    If you decide to have dessert try vegan mousse by mixing silken tofu with melted bittersweet chocolate and strawberries. Refrigerate it for at least one hour.

    It's better to just make everything vegan so you don't have to make seperate dishes.
